White Bean Chicken Chili

The Super Bowl is a huge event that brings together thousands of football fans each year. Whether you are a football fanatic or not,  the Super Bowl is a great way to spend time with the people you care about.

For some fans, their favorite thing about Super Bowl season is throwing extravagant watch parties with delicious dips and sliders.  Whether that is your mom and dad cooking or dishes other people have made, you can  almost always expect a great meal.

This year, the Super Bowl will be on Sunday, Feb. 13 in Los Angeles, California at SoFi Stadium.

Whether you are just watching the game at home with your family, or hosting/attending a party, I have the perfect game day recipe. This  delicious dish will warm everyone up, and make for some very happy football fans.

I make this dish all the time and always have days of leftovers from it, so it is sure to feed a good amount. This recipe for white bean chicken chili is simple to make, feeds a lot of people, and only costs about $20.

Ingredients:

  • One Rotisserie Chicken, shredded
  • One can of corn
  • Three cans of Great Northern Beans
  • One jar of salsa
  • One block of Pepper Jack Cheese
  • Cumin
  • Tortilla Chips (optional)

Utensils:

  • Large pot
  • Large spoon
  • Knife

Start by adding corn, beans, and salsa to your large pot. Do not drain any of these.

After these have been added, cut up the block of pepper jack cheese into cubes and add that to the pot as well. Then, add the shredded rotisserie chicken.

Set the stove to medium-high heat. Every few minutes, stir the ingredients together. Continue doing so until the cheese is melted, and the chili is warm.

When it is done, serve in bowls, and add a side of tortilla chips for dipping if desired. This can also be topped with ranch or sour cream if desired.
